Guest Chef Kevin Harris and his Sous Chef, Kota, homemade Pizza


My dear and beloved Bestest Friend, hailing from Northeast Colorado, is quite talented in the kitchen, with his trusty, cheese-tax collecting dog, Kota.

The dough recipe he used can be seen here, it’s so easy!

Kevin described the pizza making process as super easy, using the following ingredients:

Mozzerrella Cheese

The pizza dough (made from the recipe)

Marinara sauce, homemade or jarred he says is fine

Pepperoni sliced, prepackaged

Spread out the dough to the desired pizze size, lay it on the pizza stone or tray

smear the marinara sauce as the base

Sprinkle lightly or heavily the mozzarella cheese, to preference, give a sprinkle of the cheese as tax to the dog.

Top with Pepperoni (and/or other toppings)

Bake at 350 degrees Farhenheit for 30-40 minutes

Cut the pie into 4 or 8 slices and Enjoy!

Amy and Issaqueena, Walhalla, South Carolina


A delightful afternoon with my cousin as we joined up for a small adventure! We were having so much fun that we forgot to take pictures at the Waterfalls near the Stumphouse Tunnel in Wahahlla, South Carolina.

A co-worker had given me a few scratch off tickets, which we cashed in and purchased a few more, scratching them off together and laughing, joking, and pondering what we would do if we won the big pot ($10,000 on that particular game.) We didn’t win the big pot but it was fun to play a game of pretend in such beautiful surroundings.

Of course, we picked up awesome lattes and frappuccinos on our way to the waterfalls!

Kings in the Corner-Game night with snacks & Goodies


My sister hosted game night and we played the card game “King in the Corners”. My sister made homemade Apple Cinnamon Bread with apples and caramel dip. Papa brought fried chicken and fish. My Sweetness also joined in the games and fun–My sister and nephew also played in the games and goodies!

Life is better with loved ones and fun family nights! Of course, the highlight of the evening was getting to play with my nephew and watching “bop bop” along to music and hearing him squwak along as he played card with us.

If you want to partake in the fried chicken and fish, Papa picked up both at the hot food department at the local Ingles Grocery stores!

New Life on the farm, Mommy kitty is Sweet on her babies


New life on the farm is quite spectacular; even when it’s a fairly common occurence, it never ceases to amaze me.

Mommy kitty has been around the farm for sometime and her new litter of babies is quite stunning! Holly and I moved the mommy and her babies to a shed with coverage as the weather was going to turn nasty.

Walnut encrusted fillets-an easy whole meal


My neighbor moved back to Egypt (she was an international student) and gave me some odds and ends from her kitchen (versus wasting perfectly good items!) What else to do but use up the items!

I put the partial bag of flour (about 4 cups worth? ) in a a re-usable plastic dish with snap on lid) and dumped in the partial small bottles of spices-including thyme, pepper, a mixed blend of “fish fry” spices, and some salt, and other items. I dolled out about 1 cup of the mix into a paper bag (small).

I put a half of stick of butter in the bottom of a deep skillet on low heat to melt.

The four fish filets were coated in an egg washed, shaken in the paper bag of coating, and placed in the butter and pan, the heat turned up to medium, once flipped coarse chopped walnuts were added and cooked with the fish until done. I added the green beans she gave me, with Rendered Molasses and candied almonds to the pan and all warmed up; served with mandarin oranges.

Citrus Salmon, sauteed mushrooms and Mexican Rice, a meal for Kings; My sister and brother-in-law cooked for me!


The packing and moving of Papa from his old house to his new house is complete! The Guys with their pickups came, donning muscle and patience, got all the furniture moved from the old house to the new house;

I spent the night at my sister and brother-in-laws house; of course,I played with my godson (they asked I don’t share photos of them or my godson online and I totally respect their wishes!)It was so nice to not have to drive back and forth for the 2 days I helped Papa move houses.

When I arrived at their house, they had a super fancy meal made for me, one fit for Kings! They know I absolutely love fresh seafood, especailly Fresh Caught Atlantic Salmon! I am not sure what spice blend that my BIL used on the fish, but it was zesty with citrus and and the whole meals was outstanding!

With a full belly of great food, I played with my godson before my sister and I gave him a bath and put him to bed (he’s only a 5 months old). The meal, conversation, playing with my godson, and the whole event was just lovely!

Spring has sprung in the South, Sneezing all the way


I had mild, seasonal allergies before moving to the South; that story is far from being true any more. I think I might be allergic to the whole state, year around, at this point. Thanks to modern science, I do take an allergy pill that really helps. Achoo!

Spring is here, even while leaving in an apartment, I still enjoy having a small “garden” on my patio. God’s pretty glory is everywhere!

The Easter Bunny Came early to my house


My parents, living in a Western State of the USA, asked me if I would put together some baskets for the family memebers here in the Southeast; I gladly obliged and in truth, it was fun to obtain the items and fill some baskets for loved ones. God is good and he works in mysterious ways.

It was super exciting to create the baskets for 6 people on behalf of my parents, including making an easter bucket for my godson/nephew, which included flower seeds and bulbs so as he starts to crawl and toodle around the yard, he has many blooms and colors to enjoy!

Garth Brooks And Answers-the past came back to me-a reflection of God’s work in my life- Lent Day #25


There is a song, titled “Unanswered Prayers” performed by Garth Brooks (the country pop star.) That I have enjoyed since I was young (I am not trying to give away my age here, I am a lady, afterall.)

The song describes/tells the story of a man whom prays that God would make the lady his, for all time.I prayed, often, that there would be someone to take care of me, and make things super easy and all would be easy street. I didn’t think God abandoned me but thought that my requests were unanswered.

In truth, the prayers didn’t fall on deaf ears but patience and in God’s great timing, the unanswered prayers will fulfilled, in not the way I was seeking but in the ways God knew I needed fullfillment.

How so? Relecting back, the prayers were answered, fulfilled, and exceeded. A friend of mine passed away and he left me a windfall, a method of giving me some financial footing in my life, something I was struggling to do myself, being taken care of, which, in turn, lead me to be able to do needed things in my life- as well as giving me a bit of security in financial savings. I did receive help, just not in ways I was thinking I need or expected.

After all, God is control!
