Super Veggie Tiki Masala–over pasta–easy and filling


1 16 oz box of Rotini Pasta, Cooked to package directions, Al Dente

8 oz, raw mushrooms, sliced

1 large Red or Yellow bell pepper, corred and sliced into thin strips

1 yellow onion, peeled and choppped small

1 Jar Tiki Masala Sauce (I really like the kind from Aldi)

1 tablespoon curry powder

1 tablespoon Coconut oil

*You can use really any vegetables you like, I just happened to use the veggies I got from a friends garden and/or on managers special

Saute veggies briefly in coconut oil with the curry powder for 5 minutes,then add the jar of Tiki Masala Sauce

Serve over hot pasta,top with Mozzerrella or Feta Crumbles

Start to finish takes about 20 minutes, great last minute meal ideas

Amy and Issaqueena, Walhalla, South Carolina


A delightful afternoon with my cousin as we joined up for a small adventure! We were having so much fun that we forgot to take pictures at the Waterfalls near the Stumphouse Tunnel in Wahahlla, South Carolina.

A co-worker had given me a few scratch off tickets, which we cashed in and purchased a few more, scratching them off together and laughing, joking, and pondering what we would do if we won the big pot ($10,000 on that particular game.) We didn’t win the big pot but it was fun to play a game of pretend in such beautiful surroundings.

Of course, we picked up awesome lattes and frappuccinos on our way to the waterfalls!

Kings in the Corner-Game night with snacks & Goodies


My sister hosted game night and we played the card game “King in the Corners”. My sister made homemade Apple Cinnamon Bread with apples and caramel dip. Papa brought fried chicken and fish. My Sweetness also joined in the games and fun–My sister and nephew also played in the games and goodies!

Life is better with loved ones and fun family nights! Of course, the highlight of the evening was getting to play with my nephew and watching “bop bop” along to music and hearing him squwak along as he played card with us.

An alternate version of introducing the venue! I had so much fun!

“Cheaters” Vegetable Beef Stew–Super easy family meal-25-35 minutes start to finish


This one pot wonder is great for feeding a family, making transportable meals for the sick neighbor or a shut in or dividing up for freezer/prep meals. I bought all the ingrdients at the local Aldi, which I found makes the meal very affordable (the canned goods range from $0.50-$0.79 a can, the spices $1.18 on average and the ground turkery pound was under $3.)

In one deep skillet/Mid Sized pot, brown either one pound of ground beef or ground turkey.

Once the meat is cooked all the way through, chunk chop it up and leave the juice in the bottom, making a roux with the meat and drippings.

Add in the spices, 1.5 tsp each of oregano, garlic poweder, Dried Cilantro ground cumin, Tony Satcheres Creole Seasoning, Fresh ground sea salt and pepper (to taste).

Open and add a can of Sweet Corn, Green beans, Sliced Carrots and whole new potatoes (don’t drain, add the liquid to the pot).

Stir and simmer all together for 20-25 minutes until thoroughly mixed/simmered together.

I like to served it with Corn Bread (Jiffy box mix is super easy to make along side this dish or use up leftovers! )

If you don’t have these veggies, cans of Veg-All or a bag of frozen bag of Veg-All mix works nicely too as a substitute

Summer Salad-a cool way to eat in the heat


Summer in the South is especially hot and I don’t like heating up the house in the middle of the day to cook myself a meal and make the house even hotter, so what is the solution? A salad!

A bag of salad mix ( I used a Farmers Blend as it was on manager special)

a half pint of slice cherry tomatoes

small avocado, chunked small

2 tsp of chia seed

dressing of choice

*optional to add a can of tuna or leftover chicken

A wandering walk in downtown, Milwaukee, Wisconsin


my cousin Amy and I were on a hunt for postcards and a souvenir T-shirt for our cousin Charlie, and in the meantime, we found some really cool stuff and amazing architecture.

while at walking was a lot of fun, there was a slight bit of a scary moment. There, as a Jesuit piece fell down and had a really bloody nose; so after helping him get himself together, we continued to adventure, and found a really pretty chapel dedicated to Saint Joan of arc.
Amy and I thoroughly enjoyed a Middle Eastern meal at a restaurant called FiFi which is located on Wisconsin Avenue

Johnson and Oelhafen Wedding- a love to celebrate


it is official! Rebecca and Stephen have tied the knot!
Myy lovely cousin Rebecca is married now to a wonderful man, named Stephen. The wedding today was outstanding and quite beautiful, as they said their vows, and committed their lives to each other.

The wedding took place in a Wells Lutheran Church in Wisconsin, and it was such a beautiful place. Stephan’s father, an ordained Lutheran minister, married the young couple in front of family and friends today.

it has been a wonderful celebration and reception today, filled with so much love, and so many well wishes, and of course, it was a fairytale for them to kick off their lives together.

after the wedding at the church, we all met up at the reception venue for dancing wonderful food and of course what would a wedding be without Dr. Hooks “Sylvia’s mother” being played and the whole family singing and dancing together to unify the whole event!

New Things for Nourhan, An adventure with my neighbor


Adventuring with a buddy is always so much fun, especially when your buddy is your Egyptian neighbor and friend. Nourhan is an international student (such a lovely lady)-so this eveing, our schedules finally aligned where we could go on an adventure together!

Nourhan spends a lot of time in the classroom and labs at Clemson University, studying hard, doing research, and working on her thesis–and hasn’t had much time to explore before now; We are making up for lost time!

We enjoyed the local history of the Maiden taking shelter along the waterfalls to escape her captors- and the history of the Stumphouse tunnel(where the Clemson Original Bleu Cheese was originally formulated and made by the old irish immigrant recipe and more!) Plus, on our way out, a fun armadillo decided to grace us with it’s presence as it crossed the road as we drove away. Nourhan hadn’t ever seen one before and asked me what it was, a cute little armadillo!

It has been a giant blessing having Nourhand as a neighbor and a friend and I am so glad she moved in next door to me!
