It’s a big Dill–Spicy Tilapia and Steamed Veggies

It’s autumn and things are back in full swing after the joys and adventures of summer. Did you forget to set out meat to thaw or plan for a meal in advance?

This is super easy and can easily be doubled, tripled or quadzillioned into easy meals to feed yourself, a family or the group of friends that showed up at the last minute to study (because, as continuing education adults, when do we ever have time?)

I always keep some kind of frozen fish in the freezer. Usually, I buy the kind that is on sale at the local grocery store. These include buy one get one free, coupon, or club card deals. Whatever fish you may have, this recipe will work!

In the example below, it’s Tilapia fillets, skinless, boneless.

It’s super easy!

Get 1 (or 2 pieces, if they are smaller) fillet for each person, put into a skillet on medium heat with some oil (olive oil or sunflower oil is best!)

Put in frozen veggies of your choice (the California blend is seen below). Add a dash of salt, pepper, Cajun seasoning and heavy on the dry dill.Splash some lemon juice on top, let cook through for approximately 20 minutes, covered with a lid and then serve. It’s seriously that simple and it’s delicious. I like this particular dish with hot peppermint tea.

Breakfast for dinner-a fast meal after a long day-Hash and Eggs

The holidays are long over now–winter is still upon us and we are all back to the grind stone of 40+ hours a week at our jobs/careers–and sometimes a long week wears us out. A Simple, fast meal is always nice, especially when it doesn’t cost a fortune.

Ingredients:

4 Eggs

1 16 oz can of Corned Beef Hash

1/2 a large Bell Pepper (your choice of color)

Salt and Pepper to taste

Open up the can of Hash, chop up the half the bell pepper and add to hash. Simmer together until warm.

Fry up the 4 eggs in any matter you choose. I like the eggs made over-medium (whites done, yolks runny)

Divide hash and pepper mix onto four plates, top each with one egg. Quick and easy dinner, salt and pepper to taste!

Guest Chef Kevin Harris and his Sous Chef, Kota, homemade Pizza

My dear and beloved Bestest Friend, hailing from Northeast Colorado, is quite talented in the kitchen, with his trusty, cheese-tax collecting dog, Kota.

The dough recipe he used can be seen here, it’s so easy!

Kevin described the pizza making process as super easy, using the following ingredients:

Mozzerrella Cheese

The pizza dough (made from the recipe)

Marinara sauce, homemade or jarred he says is fine

Pepperoni sliced, prepackaged

Spread out the dough to the desired pizze size, lay it on the pizza stone or tray

smear the marinara sauce as the base

Sprinkle lightly or heavily the mozzarella cheese, to preference, give a sprinkle of the cheese as tax to the dog.

Top with Pepperoni (and/or other toppings)

Bake at 350 degrees Farhenheit for 30-40 minutes

Cut the pie into 4 or 8 slices and Enjoy!

Fish Fry at home, super easy

Making a meal at home is super easy, especially when a friend shared a recipe (or two) to help keep things interesting and tasty (read, I was tired of the same ol’ same old dishes that I was making.) I recalled that while I live in the South-East parts of the United States, Fried fish was a common dish (and oh, how yummy it is, too!!))

So here it goes:

Sides:

1 large can of green beans (warmed up on the stove)

2 Cups of dry, white rice–4 cups of water, cook with pinch of salt

1 small can of sliced mushrooms with a creamy pepper sauce

8 pieces of Alaska Whitening (or similar fish)

Batter..1/2 cup white flour, 1/2 cup corn flour, salt pepper, paprika in one bowl,

Second bowl has an 2 eggs beat with milk

Dip each piece of fish into the egg/milk solution, then dip into the flour mix, coating on both sides. Put the battered fish into a skillet (on medium with the bottom covered in Sunflower oil or your favorite oil) Fry Fish on both sides until crispy and done all the way through.

Place 2 friend fish, a serving of green beans, and serving of rice (with the mushroom grave on top) and serve.

Serves 4 hearty meals (or 8 lighter meals)
