Blackened Tilapia, Spiced Green Beans–One Skillet Dinner


A super easy, one skillet meal that feeds too (can feed more if double or tripled or more and if added skillets are used.)

Ingredients:

2 Tilapia Fillets

A zip lock baggie filled with 1 cup of white flour, 1 tsp salt and course black pepper, 1/8 tsp cayenne pepper and a dash of cumin

1 can of cut green beans

1 small onion chunked, 1 tsp minced garlic (jar kind is okay)

Olive Oil

In a medium sized skillet, put olive in the bottom and put on medium heat. Put each tilapia fillet in the zip lock bag and shake coating all over each put and put the coated fillet into the skillet.

When the fish is about half way done, open the can of green beans and drain them first and then add them to the skillet, along with the garlic, chunked onion, and sprinkle on salt and pepper.

Continue to cook with a lid on the skillet until everything is cooked through (periodically turning the fish)

Serves 2.

An Eggy Brunch

 

Ingredients

6 eggs

1 Bell Pepper (your choice of color), chopped

1/2 small onion (purple or yellow), chopped

2 medium tomatoes, slices in half moons

4 tablespoons salsa

2 bananas

4 pieces of sliced bread (white, wheat, rye, sourdough, your choice)

honey

Salt and Pepper

2 large sliced of real, natural cheese (cheddar, Tillister, gouda, your choice)

Method:

Omelette: Lighlty saute the bell pepper, onions, salt and pepper with Sunflower oil (or your favorite oil) in a medium sized skillet, remove half and set aside.

Crack three eggs into to skillet (with half the vegetable mix), stir to mix everything-breaking the yolks on medium/ medium low heat.

Once the eggs start firming up on the bottom, flip entire egg-veggie mixture over (like a flap jack), place half a slice of cheese on the cooked side of the egg mixture.

Once the second side has fully cooked (the eggs are not runny nor crispy-burned) fold the omelette in half over the slice of cheese and remove from the pan (cut this in half to create 2 omelettes)

Repeat these steps with the last 3 eggs and remaining half of bell pepper-onion mix (for 2 more omelletes.)

On eachof four plates: Half of each omellette (topped with salsa), half a banana, half a sliced tomatoe, and a piece of toast (with honey drizzeled on top and cut in half)

 

Fusion Taco Salad

Add half of a chopped onion

Half a chopped onion, diced tomoatoe, and small bell pepper chopped

Add one can of drained red kidney beans with the chopped vegetables into the ground beef and onion mix all together in one pan

Simmer all together and stir for 5 to 7 minutes

My friend has sent me a taco seasoning sauce packet as part of my birthday gift and I added the seasoning packet to the pot of ingredients. It is possible for you to make your own taco salad seasoning on your own but considering I had a mix already on hand I used but my friend had given me

I chopped up a half a head of lettuce and divided it between two bowls

I laddeled to have two scoops of the taco salad mix on top of the cut lettuce and serve it garnished with Hatch Chiles from a can

Dinner Made Easy


Baking is vastly becoming one of my favorite methods of cooking–it does not require constant attention, stirring, and often, it does not even require multiple pots, pans, bakeware–which is super nice and easy peasy when it comes to cleaning up. Who really wants to spend extra time doing prep, maintence cooking and clean–up when there are adventures to be had and life to be lived!!!

Super Easy, one dish meal

Baked Chicken Meal:

Small-Medium Chicken (rinsed)

1 Large Sweet Potatoe (use fork to prick holes in the skin)

1 medium Zuchinni (halved or quartered to fit in the dish)

1 Medium White or Purple Onion, Halved

Directions:

Put all the items into a baking dish or roasting pan, sprinkle salt and pepper (or your favorite seasoning mix) on top, cover with aluminium foil (or lid if using a roasting pan)

Put entire baking dish (roasting pan) into the oven at 325 degrees Farenheit, bake for 90 minutes (or until the chicken is thoroughly cooked thru to the bone) and Serve.

I used what produce is in season at the moment, making the meal super inexpensive. Also, by purchasing the whole chicken on sale, the meal came out very cheap.

This recipe can be easily altered for a larger group, simple double, triple or adjust to your group size and needs—
