I am selling my art and knitted crafts (plus other odds and ends) on eBay to help support my adventures and 10% of each sale also goes to the Wild Life Sanctuary in Keensburg, Colorado!

Super Veggie Tiki Masala–over pasta–easy and filling


1 16 oz box of Rotini Pasta, Cooked to package directions, Al Dente

8 oz, raw mushrooms, sliced

1 large Red or Yellow bell pepper, corred and sliced into thin strips

1 yellow onion, peeled and choppped small

1 Jar Tiki Masala Sauce (I really like the kind from Aldi)

1 tablespoon curry powder

1 tablespoon Coconut oil

*You can use really any vegetables you like, I just happened to use the veggies I got from a friends garden and/or on managers special

Saute veggies briefly in coconut oil with the curry powder for 5 minutes,then add the jar of Tiki Masala Sauce

Serve over hot pasta,top with Mozzerrella or Feta Crumbles

Start to finish takes about 20 minutes, great last minute meal ideas

A Walk along the boardwalk–a picnic in the evening sun at Larry W. Abernathy Waterfront Park, Clemson, S.C.


A lovely and delightful way to enjoy Spring time in Upstate South Carolina–Clemson hosts a lovely waterfront park, just off of Tiger Boulevard (parking is easily done at the local Wendy’s and the trail head is just a 1/2 block away!)

The trails are all marked and either paved or done with a board walk style, offering many picnic tables and benches and hanging swings over beautiful docks and more! I witnessed many couples and groups of friends using the lovely accomodations along the trail!

I walked a total of 40+ minutes, taking a little break in the sunshine to get some sunshine on my very winter white legs, while I enjoyed a picnic that I purchased at Wendy’s-I chose the $5 grab bag (with a slight upcharge for a larger drink!)

The breeze was blowing lightly off of the Lake while I enjoyed watching the fishermen ply there talents and skills from their boats, thoroughly enjoying the light refreshing days of Clemson, S.C.

The Beautiful Joining of Two Hearts-The Margaret Johson and Christoper McCann Wedding


The Joining of two hearts!

Congratulations to Mr. and Mrs. Christoper McCann!

The wedding was officiated by Pastor Stephen Oelhafen (also the bride’s brother-in-law) at St. John’s Lutheran Church, with a lovely, heart felt-Ceremony!

The couple met in college and found love, may they enjoy many many decades of bliss together!

A delightful afternoon with my cousin as we joined up for a small adventure! We were having so much fun that we forgot to take pictures at the Waterfalls near the Stumphouse Tunnel in Wahahlla, South Carolina.

A co-worker had given me a few scratch off tickets, which we cashed in and purchased a few more, scratching them off together and laughing, joking, and pondering what we would do if we won the big pot ($10,000 on that particular game.) We didn’t win the big pot but it was fun to play a game of pretend in such beautiful surroundings.

Of course, we picked up awesome lattes and frappuccinos on our way to the waterfalls!

Kings in the Corner-Game night with snacks & Goodies


My sister hosted game night and we played the card game “King in the Corners”. My sister made homemade Apple Cinnamon Bread with apples and caramel dip. Papa brought fried chicken and fish. My Sweetness also joined in the games and fun–My sister and nephew also played in the games and goodies!

Life is better with loved ones and fun family nights! Of course, the highlight of the evening was getting to play with my nephew and watching “bop bop” along to music and hearing him squwak along as he played card with us.

If you want to partake in the fried chicken and fish, Papa picked up both at the hot food department at the local Ingles Grocery stores!

A Rockin’ Good Time-Garden of the Gods, Colorado Springs, Colorado


An alternate version of introducing the venue! I had so much fun!

Garden and Chicken-Indonesian Inspired stack bowl


My Sweetheart’s Mother planted a small garden before going to visit family and asked me to help him take care of it while she is on vacation-what to do with the harvest but to eat the bounty!

Chop and simmer the following:

2 Green Bell Peppers

1 large (or 2-3 small fresh zuchinni)

2 small purple onions

4-6 toes of garlic

2-4 fresh Jalepenos

10-15 cherry tomatoes, sliced in half

Himalayan Salt, Pepper, and ground cumin

In a Seperate pan, Simmer 2-3 large chicken breast, once cooked, top with a jar of Korma Sauce (usually found in the international aisle of the supermarket), simmer until warm.

Ladel the steamed/sautched vegetables into the bottom of a bowl, top with the chicken korma mix, enjoy! Top with a bit of siracha sauce and/or feta cheese.
