Breakfast for dinner-a fast meal after a long day-Hash and Eggs


The holidays are long over now–winter is still upon us and we are all back to the grind stone of 40+ hours a week at our jobs/careers–and sometimes a long week wears us out. A Simple, fast meal is always nice, especially when it doesn’t cost a fortune.

Ingredients:

4 Eggs

1 16 oz can of Corned Beef Hash

1/2 a large Bell Pepper (your choice of color)

Salt and Pepper to taste

Open up the can of Hash, chop up the half the bell pepper and add to hash. Simmer together until warm.

Fry up the 4 eggs in any matter you choose. I like the eggs made over-medium (whites done, yolks runny)

Divide hash and pepper mix onto four plates, top each with one egg. Quick and easy dinner, salt and pepper to taste!

Breakfast Bowl–Using up leftovers


Every now and gain we have leftovers and the question of “What’s for dinner”, sometimes both can be satisfied by coming just a few leftover ingredients.

While I am a huge fan of having breakfast for dinner, this meal can be truly served at any time of the day and be a success.

The ingredients of this breakfast bowl are easy: leftover baked potatoes, chunked and lightly fried, add leftover green beans and onion, salt and pepper and about a half dozen cracked eggs (after adding a bit of corn oil to the bottom of the pot first). Stir and simmer until it’s all the way cooked through, served with a drizzle of ketchup on top. Super yummy and it it’s inexpensive.

We had an ‘American’ style breakfast of pancakes, apple cinnamon compte, bacon, farmers omellete, juice, coffee, and an egg assortment (over medium, scrambled with cheese, sunny side up, and more!)

 

For the last several weeks, we (my german lady friends) and I have been for coffee, conversation, and culture—well, mostly just to talk in English as both desire to improve their English communication skills–and had asked me to meet with them more often for practice–always a fun way to learn and I really enjoy spending more time with my ladies.

Thus, every week we meet…and the laugther follows.  Last week, the topic of favorite foods and cusine from our own cultures incorporated itself into the evening, as we ate (naturally, what is better than food with friends?)

The ladies, being both German, eat German breakfast–but have never tasted the delights of an American or ‘farmers’ breakfast so this week, as planned, they drove over for our weekly conversation and I made ‘brinner’ (breakfast for dinner)–a favorite of mine.

The menu included:

An Assortment of Pancakes-cinnamon raisin syrup–Apple Walnut compote

An assort of eggs cooked in a variety of ways

A Farmers omellete (large), topped with melted cheese

and Bacon (what breakfast is complete without bacon?)

Coffee, Juice
