Meat Free Friday–Celebrating Lent Recipe


Here’s a simple easy (and cheap!) recipe!

Ingredients

1 can pinto beans (don’t drain!)

1/2 a bell pepper (any color)

a hand full of grape tomatoes, quartered

1 tsp of Cajun season

Sour Cream for topping

Combine the beans, cajun seasoning and vegetables into a small pot, simmer for 8 minutes on medium, serve with tortillas and a dollop of sour cream on top. Feeds 2.
