Easy Fajitas-Gringo Style

A friend shared some lovely garden produce, including bell peppers, jalepenos, tomatillos, tomatoes and more, so what is a girl to do? Make Fajitas with fresh made salsa!

Roughly 1 pound of Bell Peppers, assorted color, sliced up

3 small white onions chopped, split-2 for fajitas 1 for salsa

7 various size fresh jalepenos

6 small/long serano peppers1

6 large tomatoes

6 tomatillos

1/2 pint of fresh baby mushrooms

2 tablespoons of minced garlic (fresh or jarred)

1 pound of ground turkey (I got this at Aldi as it’s super tasty and inexpensive)

1/4 of beef tips or skirt steak (or any manager’s special beef cut)

1-10 ct bag of flour tortillas

Salt and Pepper (I like the self grinding bottles of black peppercorns and Himalayn salt, packs a punch!)

1 tablespoon of Garlic and Herb Mixed season

1 tablespoon of Smoked Peach Rub season (seen in photo below, I don’t know if other brands are made of this!)

Saute/Fry the Beef and ground turkey with salt and pepper in a deep skillet with a dash of oil

Chop up all the veggies, add to meat skillet when meat is 90% done, adding the Smoked peach rub, 1 tablespoon of garlic and Smoked peach rub. Simmer/Saute on medium low heat until the veggies are soft but crips and meat is fully cooked.

While the meat is cooking, get a medium sized pot and add the jalepenos, tomatoes, tomatillos, serranos and 1 tablespoon of garlic, simmer on medium until all the mix is soft but don’t let boil. Put the mix, once cooked, including water, into a blender and mix/blend until smooth (it will be a little runny).

Serve the fajita mix in a large service bowl with the tortillas warmed up on the flat top and the salsa in a bowl with a spoon (or a small pitcher for pourin). The fajita mixed is wonderful stuffed in warm tortillas and topped with homemade salsa.

If there is extra salsa, it’s great with chips or served over egges.

Happy Independance Day! Life is great as an American

The year of 1776, our founding forefather debated, drafted and signed in Independance Hall in Philledelphia a Declaration of Independance, stating the intent of governing ourselves, foregoing the attatchment to England, sparking a Revolution. Happy Independance Day!

My family and I celebrated by gathering together for a relaxing barbeque-everyone brought a bit of this and that so that that burden wouldn’t be on one group or another-making the meal quite exquisite to the eyes and taste buds. Of course, my little godson was the star of the show with his giggles and laughter-4 generations show up and oh, boy! We celebrated to our hearts delight!

The beef T-Bones steaks came from our parents farm in Colorado (quality, natural beef is so much better!) and most of the vegetables came from the garden at my Sweetness’ house and the papaya came from Aldi-every thing was made from scratch. My brother in law carefully and exquisitely seasoned the steaks and let them “set” over night-and the garden salad was dressed in olive oil, basil leaves, fresh ground pepper, and lime juice. Everything was kept simpe; the papaya was also spiced with chili pepper powder and grilled with the squash and okra!

The aluminium foil packets are “Cowboy potatoes”, which are chunked, skin on red potatoes, chopped onions, himalayn pink salk, black pepper, garlic toes, a bit of butter, wrapped up into aluminium pouches and grilled (cowboys out on the rance would stick them in the camp fire!) And for the record, smoke bombs, the bright colored ones, and sparklers are some of my favorite fireworks!

Happy 4th of July!

Summer Salad-a cool way to eat in the heat

Summer in the South is especially hot and I don’t like heating up the house in the middle of the day to cook myself a meal and make the house even hotter, so what is the solution? A salad!

A bag of salad mix ( I used a Farmers Blend as it was on manager special)

a half pint of slice cherry tomatoes

small avocado, chunked small

2 tsp of chia seed

dressing of choice

*optional to add a can of tuna or leftover chicken

A wandering walk in downtown, Milwaukee, Wisconsin

my cousin Amy and I were on a hunt for postcards and a souvenir T-shirt for our cousin Charlie, and in the meantime, we found some really cool stuff and amazing architecture.

while at walking was a lot of fun, there was a slight bit of a scary moment. There, as a Jesuit piece fell down and had a really bloody nose; so after helping him get himself together, we continued to adventure, and found a really pretty chapel dedicated to Saint Joan of arc.
Amy and I thoroughly enjoyed a Middle Eastern meal at a restaurant called FiFi which is located on Wisconsin Avenue

German inpsired Lunch- Kalt vs. Warm Essen-Lecker!

I lived in Germany for over a year (in the northern part of the Black Forrest) and it was common to have either a “warm or cold” meal. I am not sure the inspiratoin or cultural aspect behind this but it was a “thing” for sure!

I chose a cold lunch today, German style, sans the liverwurst (I am not personally a fan of pate or organ meat, of any sort.)

I used whipped cream cheese versus pate/liverwurst on my toasted brotchen and sliced raw veggies and drank a tea with it. Lecker!

A quick meal–open, mix, bake, eat.

Cornmeal Chicken-Pan Fried Fritter Perfection

Yes, I have been cooking different recipes as of late to add to my cooking skills, for starter, but also to add variety to the palate, without breaking the bank or hunting all over the state for ingredients. Friends, family, pinterest, old world cook books–all are wonderful resources!

The coating for the chicken (I used chicken breasts but any cut of chicken, boneless or not would work well) is pretty easy.

The Coating:

2 cups of cornmeal flour, add salt, pepper, dehydrated onions, cumin, dry parsley flakes, italian season, and minced garlic (I used the minced garlic that comes in a jar.)

Coat each piece of chicken in egg wash and the mix, twice over each (it’s thick, but that’s the inten.) Put in a deep pan with olive oil (you can use corn oil, too, if it’s what you prefer.)

Cook the chicken until it’s about 90% cooked through, put a bag of frozen veggies on top (I used a bag of the corn, peas, corn, and green bean mix.) Cook for about 8 more minutes, pull out the chicken and veggies and plate. While the chicken is resting, make a sauce.

The sauce is from the pan “drippings”. Add a couple of spoons of the cornbread coating mix left over from the coating; mix it all together until it’s pasty and getting toasted. Add either water or chicken broth mixing slowly on medium heat and ladel over the chicken and vegetables. Serve with a side of sliced tomatoes.

Super yummy and super easy to make! It can be reduced in quantity for smaller meal or increased easily for feeding many!
